Ingredients
- ¾ cup 180 ml heavy whipping cream
- 2 tbsp 2 tbsp mayonnaise or vegan mayonnaise
- 1 tsp 1 tsp Dijon mustard
- 2 tbsp 2 tbsp olive oil
- 1 1 garlic clove, minced or finely choppedgarlic cloves, minced or finely chopped
- salt and pepper
- 1 oz. 28 g butter
- 8 oz. 230 g kale
- 4 oz. 110 g blue cheese or feta cheese

Making low carb simple
Instructions
Instructions are for 4 servings. Please modify as needed.
Mix together heavy cream, mayonnaise, mustard, olive oil, and garlic in a small beaker. Add salt and pepper to taste.
Rinse the kale and cut it into small, bite-sized pieces. Remove and discard the thick stem.
Heat a large frying pan and add the butter. Sauté the kale quickly so it turns a nice color, but no more than that. Taste for seasoning and adjust as necessary.
Place in a bowl and pour over the dressing. Stir thoroughly and serve with crumbled blue cheese or another flavorful cheese of your choice.
Tip!
The dressing is great with any type of leafy green salad.If you like green juice, save the kale stems and ribs and use them in your next juice!

I made this with a semi soft goats cheese and spring onions and it was incredible. Next time I will likely try it with chèvre

This one is tasty and super easy. Used lacinato kale and it took only a few minutes to saute. Cut cream down to 1/3 cup (there is plenty of dressing for the salad), added a dash of cayenne, and used 2 ounces of gorgonzola (I think 4 ounces would have been too much taste wish). Everything else was per the recipe.
My teenager and husband enjoyed it...will add to the recipe box to make it again!3

I tried this tonight with some cheddar cheese and adding sliced leak on top, it was heavenly and we couldn’t finish the whole thing. Definitely satiating, genuine Keto effect and our tummies are very happy. Brilliant recipe!!

For me it was okay, not excellent. I would try the sauce over hard boiled eggs next time.
Maybe I used the wrong kind of kale? It was (to me) not as good as many other recipes I've tried from this site. 😟

I’m cow dairy and chicken egg intolerant so I substituted the heavy cream with coconut milk and the mayonnaise with almond butter. I also added more garlic and Dijon. No measurements; just eyeballed. Turned out pretty dang good.

I liked this but made a few changes for a 1 person portion. I added a stem of shallot, used 30ml cream instead of 50 and sprinkled with danish feta. Really good!
